Orange Cranberry Cookies (egg less)

It may not be Christmas yet but with these cookies in the oven you will think it is. They are soft, chewy and with a hint of orange, they make a perfect tea time treat. Cranberry adds a nice tang to the cookie. It makes for a lovely hostess gift too. Put them in a parchment lined round tin, and people will think it was bought from a gourmet store.

Recipe :

Ingredients :

  • 1/2 cup flour
  • 1/2 cup almond powder
  • 1/4 cup desiccated coconut
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp vanilla
  • 1/4 cup flavorless oil
  • 1/4 cup brown sugar
  • 1/4 cup mix of dried cranberries and walnuts
  • 1 tbsp orange zest
  • 2 – 3 tbsp milk

Method :

In a bowl combine flour, almond powder, desiccated coconut, baking soda, salt and the fruit and nut mix. Whisk to combine.

In another bowl, whisk oil, sugar, orange zest and vanilla.

Mix the wet with the dry. Combine till a dough forms. If it’s dry add 1 tbsp milk at a time, till the dough is soft but not sticky.

Scoop and flatten the cookies, they do not spread much while baking. Freeze for 2 hours or overnight is better.

Bake @170C for 15 mins or until golden. Allow to cool completely and store in an airtight container, although doesn’t last long.
